Finally Sardinha Fora da Lata will have its space. It will be in my city, Luso and in one of the most beautiful areas, Lago do Luso. Surrounded by green and peacefull nature, it is the ideal spot for this project to take shape.
A Slow Food restaurant concept that will focus on providing a gastronomic experience that emphasizes the values of local, sustainable and traditional food. We aim to reconnect people with the origins of their food, promote regional culinary traditions and support small farmers and producers.
As part of this Slow Food context, we will therefore value:
Locally sourced ingredients. We will prioritize the use of organic, seasonal and locally sourced ingredients. We will forge relationships with nearby farmers, producers and artisanal producers to ensure the freshest, highest quality ingredients. So our philosophy will be farm-to-table. By working directly with local farmers and producers to source ingredients, we minimize the distance between garden and plate. With this approach we support the local economy, reduce the carbon footprint and ensure transparency in the food supply chain.
We will use traditional and artisan techniques in the kitchen such as fermentation, curing and slow cooking. Techniques that enhance the flavor and nutritional value of food, preserving culinary traditions.
Menus will be seasonal to reflect ingredient availability. This practice not only guarantees the freshness of the dishes, but also promotes biodiversity and a deeper connection to the natural environment.
Ethical and sustainable practices such as animal welfare, fair trade and sustainable agricultural practices. We will focus on vegetarian or vegan options and we will focus on minimizing food waste through creative menu planning and adopting composting in conjunction with the municipality.
One of our goals is to build community involvement by organizing events, workshops and partner visits to raise customer awareness of the importance of sustainable and local food. We will also be involved in charitable initiatives or support food-related education programs.
