What if there was a restaurant without a garbage bin in Portugal? That is our goal. Everything coming through our door will be eaten, reused or turned into compost. We're creating a more sustainable, healthy and sustainable world.
We are idealists. We believe in a more conscious, healthy and sustainable world – a world with a 100% plant-based diet, using local, seasonal, organic ingredients and that rejects generating unnecessary waste.
These principles have guided our project ever since the beginning. It has been two years organising culinary events – most of them at our own place (first in Amsterdam, now in Lisbon) – and now it is time to take the next step in our mission: to expand to a bigger home, with other conditions, preserving the essence of what we already do.
The goal is ambitious and boils down to a question: what if there was a restaurant without a garbage bin in Lisbon? This is what brings us to this campaign. It is the goal we want to achieve.
Through this, we want to change the way people look at waste. We want a place with no packages nor waste. Everything coming through our door will have three possible destinations: it will be eaten, reused or turned into compost.
- We will work very closely with local, conscious farmers who are committed to the principles of organic agriculture, share our values and are determined to lead by example, making sure that throughout the entire process no waste is produced.
- We will reuse materials that would otherwise have limited use – turning them into something different or finding someone to give them a second life.
- We will have a composting machine, capable of digesting organic waste within 24 hours. The resulting compost will then be given back to our farmers – thus closing the circle. By doing this, we will also save in additional transportation and treatment costs of our waste.
None of this will be immediate. Unfortunately, we are part of a system that isn’t ready for what we want to do. A third of all food produced in the world ends up going to waste and the restaurant industry is responsible for a sizeable part of this.
We want to be part of the solution, helping raise awareness and inspiring people, companies and organisations to the need for change. Without ever forgetting something essential when we talk about food: taste and the whole sensorial and social experience.
If you already know us, you can count with the same atmosphere from each of our events. We will mostly operate on a closed-door basis, with pre-bookings, to make sure there is room for an intimate experience, with time to enjoy it. And we will have our pantry at your disposal, so that you can take our products with you.
But we don’t want to do this all by ourselves. We know there is a growing number of people who identify themselves with these values and the urgency in making changes toward a more conscious, healthy and sustainable world.
