Ippyfil is a project to create a craft beer Lab where we will develop the most original recipes never ever seen in Portugal before by linking the creativity with science.

Ippyfil is a craft beer brand created in 2017 by Filipe Matos when he decided to named his homebrews. Later Inês Eugénio a biological engineering student joined Filipe. Together we have produced several different beer styles, always trying to improve our recipes using different ingredients. Nowadays, we have an effective production of 20 L with a complete hand work except during the fermentation where the temperature is controlled electronically using a hand made prototype.

After more than two years of brewing beer, we have decided that is time to improve our concept so as engineers and scientists we are, we have decided to create a craft beer lab which this campaign targets. We pretend to do small batches of 75 L where we are able to fully monitor and control each step during the production.

We will use a HERMS (Heat Exchange Recirculating Mash System) which allows us to fully control the temperatures in each step. This system has 3 kettles, one to heat and store water, other for the mashing, lautering and sparing and a third one for boiling. This way we will be able to reproduce any recipe which allows us to improve them always introducing our creativity in order to design the "perfect" recipe. In the long run this will result in new recipes and styles never brewed in Portugal.

All of this process will be controlled electronically using the BrewPi software, a PID controller developed in The Netherlands which was initially designed to control the fermentation temperature now expanded to control and monitor every step. We will use this system for both the brew day and fermentation stage using modified common fridges as we now do.

As one of our values is environmental sustainability we will use environmental friendly materials such as cork alongside with organic ingredients, beginning with growing organic hops in our garden.

The beer brewed here will be for our current followers and the ones that still have to discover us. We also pretend to increase the curiosity about the brewing process by organizing workshops for beginners or introductions to the HERMS and associated electronics for the curious. Last but not least we will develop customized batches for the ones that love to have special beer at home :)

About the author

Filipe Matos:

Bsc in Physics Engineering and Msc in Astronomy & Astrophysics from the University of Amsterdam

Interested in craft beer for several years, began homebrewing in 2017. From then he has been always motivated to improve each recipe and continue to learn. With strong knowledge in programming and electronics is responsible for these developments in this project.

Other interests include astronomical observations, sports and environmental protection. In August he work at Planet Oedipus, a craft beer festival in Amsterdam where he collaborated with To Øl, giving him the opportunity to taste hundreds of special craft beer and meet amazing people. More recently, when after returning to Portugal he began working at a local brewpub where he had the opportunity to brew in a larger scale as well as know the local market.

Inês Eugénio:

Bsc in Biological Engineering at Instituto Superior Técnico where is finishing her master in the same major.

Member of IST Brewing Club since 2017

Intern at "Central de Cervejas e Bebidas" (Sagres' factory) for her master thesis.

With two summer internships, one about food security at Silliker Portugal and another about water quality control at Águas de Monchique.

Advanced knowledge in microbiology, fermentation, industrial processes and food industry. Due to her background is responsible for the research done in this lab regarding the behaviour of yeast in different conditions.

When available helps out at União Zoofila.

    We would like to announce that today after one month of campaign ( which corresponds to half of the total time) we have overcome the 2000€ barrier thanks to more than 67 backers and for that thank you all!
    We had backers from 6 different countries and 3 different continents which shows how beer can easily cross borders!

    We are very close to our minimum target of 2500€ but we believe that we can reach 3000€ by the end of the campaign which would mean one more batch fermenting at the same time so more and better beer for all of you! You already showed us how you believe in this project so now is the time for you to share that feeling with your network. Don't forget: Sharing is caring, but now is even more than that. This time sharing means more beer which you can use as an excuse to gather some friends and have an excellent time together!! Share our project to your friends, family and everybody which enjoys having great beer around.

    Another update we would like to share with you: we have now began remodeling ippyfil's beer lab, which day after day is becoming more appealing to people to come sit and enjoy a fresh beer! We strongly believe this space should be shared with all of you so more updates will come!!

    As afinal news, our hops are growing healthy in our garden. This is the first time we grow hops so we don't know yet how much will they produce this year but we are confident that there will be plenty for you to try!!
