We want to move beyond just kombucha and build a more diverse fermentation project. We've reached the limit of manual kimchi production and need your help to take the next step: buying an industrial processor.

We can't continue to depend on a single product. Why?

We've reached a point where, to build a healthy and financially sustainable company, we see two paths:

There are two options:

  1. To produce more and more kombucha , industrializing and mass-producing the process to lower costs and be able to compete on price.
  2. Diversify , creating new products and new revenue streams that allow us to continue making kombucha the way we believe in, without compromising its quality.

We want to work towards the second approach.

We don't want to industrialize MAI kombucha and enter the market's price war. But we still need a solution so we can consolidate ourselves with more balance and sustainability.

That's why we started making kimchi. Then came the shots. And we want to continue exploring other fermented and real foods.

This is the idea we've been developing: The End of Monoculture.

Time

We believe that diversity can be a way to build a more balanced, resilient, and long-lasting MAI (Maintenance, Innovation, and Communication).

We've discovered over the course of this year that diversification can also be dangerous. Making kimchi, shots, and continuing to produce kombucha at the same time brought more processes than we could handle.

Kimchi and sauerkraut are proving popular, but they require a lot of work, and we've reached the limit of what we can produce by hand with a home food processor.

What is the objective of the campaign?
To raise, through rewards, the necessary funds to purchase an industrial food processor.

This machine will make one of the most time-consuming steps in our kimchi production much faster and simpler: cutting and preparing the vegetables .

This is an important step towards continuing to increase kimchi production without turning a traditional process into one that is impossible to manage.

Why this campaign?

The new equipment costs around €8,800 . MAI can invest part of this amount, but we need to raise the rest.

At the same time, we have product available and we launched this campaign to make an effort to raise the remaining stock.

When you purchase one of the campaign rewards, you're not simply making a donation. You receive MAI products and, at the same time, help us transform those products into liquidity so we can make this investment without compromising the company's financial health.

We are entering our seventh year and this will be our third crowdfunding campaign , in addition to the five crowdlending campaigns we have done along the way.

We have grown slowly, trying not to take steps that are bigger than we can handle. And it is precisely this prudence that leads us, once again, to ask for the support of our community to take the next step.

About the author

Hello!

Gonçalo Promotor

I'm Gonçalo. I was born in Portugal, grew up in Rio de Janeiro, and returned to the country in 2019, at the age of 26, to start MAI Kombucha.

Before that, I spent four years traveling and living in different parts of the world. It was during this time that I discovered kombucha and fell in love with this drink. On a trip to Portugal, I felt that there was a lack of good, authentic kombucha. With this realization, I decided to return to Portugal to start a kombucha project. That's how MAI began.

What started as a project to teach people how to make kombucha at home has transformed, over the years, into a company. Today we have a factory and are the largest producer of artisanal kombucha in Portugal.

I've been living for this project for 7 years and I'm determined to make it my life's work. And in the process, I'll be trying to overcome the obstacles that arise in creating a company.

Thank you so much to everyone who has been nurturing this story with us since 2020. ❤️ You are my greatest support!

THE EQUIPMENT

The equipment we want to buy, including shipping, costs approximately €8,000 . See the equipment video: https://www.youtube.com/watch?v=BeD7P5-rJP8&t=27s

THE SOLUTION

Currently, MAI is able to invest €3,000 of its own capital. And the campaign aims to make a collective effort to achieve this goal.

The goal is to raise €5,500. The rewards we are offering are already produced and in stock, so we will not have to bear any new production costs.

It's a joint effort: we put up a portion of the investment and ask our community to help us make the rest possible by buying some of our products.

The purchase of the machine will only be possible if we manage to reach the total amount of the campaign. If we succeed, we will be able to start producing fermented vegetables right when the cabbage season begins: from November onwards.

If we can't finance the entire amount, we'll first deplete the stock of bottles we already have, and then rethink our next steps.
